Ramen Alfredo

Ah, the Culinary delights of the Mediterranean....the smell of garlic and parmesan fill the air.

1 pkg chicken ramen
1 clove garlic, chopped
1 Tbsp. butter
1/2 c. Milk or half & half
2 Tbsp. Parmesan cheese
1 sprig parsley chopped (or 1/2 tsp dried)

Cook ramen without flavor packet.
Strain out MOST of the water...leave in a few tablespoons.
Mix in the chicken flavor packet and a small bit of butter or olive oil to keep the noodles from sticking together, then set aside in serving bowl.
In the same pan that you cooked the ramen in, melt butter over medium-low heat, add chopped garlic and stir. Stir and cook until garlic is lightly browned.
Add milk (half & half) and parsley, then stir for a few seconds to heat thoroughly.
Remove from heat and immediately add the parmesan cheese, stirring while adding. Pour this sauce over noodles in bowl. Sprinkle on more parmesan, if desired.
Serve with (or mix in) peas, if desired.




Asian Pulled Pork Ramen

Asian inspired flavors mix with healthy herbs for a nutritious and cheap ramen experience.

1 pkg pork ramen
1-1/2 c water
1/8 cup shredded cabbage
1/4 c leftover pulled pork
1 pork ramen flavor packet
1 scallion (green onion)
1 Tbs sesame oil
Cayenne oil, optional
Dried nettle, parsley, moringa, celery seed and/or your favorite nutritious herb

Place noodles and water in pot, bring to boil, add cabbage and pulled pork, and flavoring packet. Stir and bring back to a boil. Turn heat down to medium low and simmer for 2 minutes.

Meanwhile...slice scallions small and put into bowl. Add the sesame oil to the bowl. Add a touch of cayenne oil, if desired. Sprinkle in some dried or fresh herbs. Remove noodle mix from heat and carefully pour into bowl. Stir and enjoy!


Protein Punched Ramen with Egg and Veggies

Big struggle? Easy on the budget with big taste! Love this simple ramen recipe.


1 pkg Oriental flavored Ramen
1 Egg
leftover corn
leftover green beans
or preferred leftover veggies

Leftover Cheesy Pork Supreme

1 pkg. pork ramen noodles
leftover pork
1 Tbsp butter
1/4 cup chopped onions
leftover veggies, if available and desired
1/2 cup shredded cheddar cheese

Prepare ramen noodles, leaving a little bit of water left in it to make the broth, and mix in the pork flavoring.
In a saute pan, melt the butter or margarine over medium heat.
Add the chopped onions and season to taste. Saute until tender.
Add the leftover pork and veggies, then heat through.
Pour the ramen into a baking dish and top with the sauteed pork and veggies.
Sprinkle the cheese over top and bake in a 400 degree oven for 15 minutes, until the cheese has melted.
Serve topped with a spoonful of sour cream.

Leftover KFC Delight

1 pkg. chicken ramen noodles
1 Tbsp. butter or margarine
leftover fried chicken (or other chicken) pulled off the bone and cut to desired size
1/4 cup white wine
1/4 cup chopped onions
leftover veggies, if available and desired

Prepare ramen noodles, leaving a little bit of water left in it to make the broth, and mix in the chicken flavoring.
In a saute pan, melt the butter or margarine over medium heat.
Pour in the wine.
Add the chopped onions and season to taste. Saute until tender.
Add the leftover chicken and veggies, then heat through.
Add this to the ramen and broth and serve.

Barbeque Pork Ramen

1 pkg. Pork Ramen Noodles
1/2 cup of leftover shredded pork
1/4 cup chopped onions
1 tsp of oil
garlic, salt and pepper to taste

Prepare ramen noodles according to package. Drain and stir in flavor pack.
In a saute pan, heat oil and add the chopped onions. Salt, garlic and pepper to taste.
Saute on medium heat until onions appear translucent and are tender.
Add leftover shredded pork and saute on mendium heat until heated through. Add 1 Tbsp of barbeque sauce if desired.
Serve over noodles.

Sesame Pork Ramen

2 pkg. Pork flavored Ramen Noodles
1 Tbsp. sesame oil
1 clove garlic, chopped (or a couple of sprinkles of garlic powder)
1 cup of sliced boneless pork
1/2 can water chestnuts, sliced or diced
8-10 snow pea pods
1 chopped scallion

Cook the ramen according to package directions and add pork flavoring packets.
In a saucepan, heat the sesame oil and add garlic. Saute until lightly browned.
Add boneless pork and cook on medium high heat until pork is browned.
Add water chestnuts, and snow peas. Cover with tight fitting lid and cook on high for 1 minute.
Remove from heat and serve over ramen. Sprinkle with chopped scallion

Lemon-Creamy Chicken Ramen (serves 4)

2 pkg. Chicken Ramen
1 can (13 oz.) cream of chicken soup
1/2 lb. to 1 lb. boneless chicken strips or pieces
1 clove garlic (or a couple of sprinkles of garlic powder)
1/2 tsp lemon juice
1 tsp onion, chopped or flakes
1 tsp olive oil or 1 tsp butter/margarine

Cook ramen according to package with seasoning packet added. Set aside.
In a pan, heat oil or butter over medium high heat.
Add garlic and onion and brown slightly.
Add chicken and brown.
Add cream of chicken soup and cook until chicken is tender. (if sauce is too thick when cooking, add a little milk or water until desired thickness is achieved).

Serve over noodles.

Shrimp and Sesame Ramen

1 pkg. Shrimp flavored ramen noodles
1 can small salad shrimp, drained or 1/2 c. of cooked shrimp
1 tsp sesame oil
1/4 c. bamboo shoots
6 snow pea pods

Cook ramen according to package including the shrimp flavor packet.
In a small pan, pour 1 tsp sesame oil and heat over medium flame until hot.
Add shrimp and stir.
Add 1/4 c. bamboo shoots and 6 snow peas (cleaned and de-stringed).
Mix well and stir until heated.
Serve over the cooked shrimp noodles.
